~P and Melissa I will vouch that boiled eggs in gumbo is often seen throughout rice country of South Louisiana. Many of the older generation farmers would not consider eating it without an egg. They all would add potatoe salad in the same bowl which I love to do! I have seen the eggs dropped in the shell into the gumbo then peeled and put back in and also cracking the eggs into the hot gumbo to cook.

Now when’s the gumbo cook off? Once it cools off I’m ready to compete, trade secrets only given to the best bribes!
